Here are my most recent chocolate creations: a dark chocolate shell, filled with a milk chocolate and orange flavoured ganache.
Really happy with these, I think they might just be the best I've created - really nice balance of flavours, nicely tempered chocolate, and smooth (but not too runny) ganache.
Quite a temper...
Turned out quite well, I changed up my technique a bit for this batch and it seems to have paid off.

Here are the empty shells, obviously, before filling. At this stage I wasn't entirely convinced they would release...
In the moulds. As you can see, there's air bubbles on the bases, that's because I didn't tap it down enough before they set. This is why I need a vibrating table...
As you can see with these, they released well, and have a nice gloss on them. Good finish.
Really happy with these, the balance of flavours between the dark shells, milk chocolate in the ganache and the orange flavour works well.
They might be the best I've made so far actually - just shows that practice does pay off...
